Apple Shortcake Ingredients

Directions
1. Preheat oven to 180C.
2. Sift the flour and baking powder into a large bowl.
Rub in the butter with your fingertips until the mix resembles breadcrumbs.
3. Mix in the first measure of sugar and the beaten egg.
Add the milk, mixing to form a stiff dough. Tip out on to a lightly floured surface
and knead lightly.
4. Divide the dough in half then roll one piece out to
fit a greased 20cm x 30cm tin.
5. Peel, core and thinly slice the apples, then scatter
over the dough. Sprinkle with the second measure of sugar and the brandy. Roll
out the second piece of dough and lay over the apples, pressing down
slightly.

Bake for 25 minutes then dust with icing
sugar and cut into pieces.
Ms Vari's Fave Biscuit Fudge Recipe (quick, easy, no-bake)
150g butter
3/4 C sugar
1 Tbs cocoa
1 egg
1 packet wine biscuits, crushed
handful raisins (optional)
Heat butter, sugar & cocoa till melted. Let cool, then add egg & beat well. (If mixture is not cool, when you put the egg in, your fudge will have bits of poached egg in it! Believe me, I know from experience!)
Cook for a further minute, stirring all the time.
Add crushed biscuits & raisins. Mix well.
Turn into a greased sponge roll tine & press down firmly.
Leave to set.
Ice with chocolate icing when cold. Cut into pieces.
